Baby Red Tatsoi



Red Tatsoi (Brassica narinosa) is a member of the mustard family with glossy, deep burgundy-blushed leaves, short pale lime green stems, and a tender, succulent texture. Fresh Tatsoi boasts a sweet, tangy flavor. When cooked, it retains much of its distinctive color, while developing warm earthy flavor notes akin to spinach and chard.

Red Tatsoi excels in a wide range of culinary applications. Its tangy and earthy notes pair well with citrus and with cool ingredients such as pears, fennel, and mint, as well as with the warmer flavors of chiles, garlic, and allspice. Red Tatsoi also nicely complements umami-rich ingredients such as scallops, mushrooms, seaweed, and braised meatas, and goes well with fermented ingredients like soy and fish sauces and vinegars.

Red Tatsoi is a good source of carotenoids, folate, calcium, and potassium, and of vitamins A, C, and K. Its rich color derives from anthocyanins, antioxidants often credited with health benefits including the reduction of inflammation and protection from cancer, heart disease, Alzheimer’s, and type 2 diabetes.
