Baby upland cress has rosettes of dark green, glossy round leaves with a spicy flavor similar to watercress, a lingering sharpness, and a delicate peppery taste. Like other dark leafy green vegetables, upland cress is packed with nutrients, but it is the flavor that sets it apart, always ready to impart a special tang to salads, sandwiches and mixed vegetables, or to serve as a distinctive garnish.
