Lakeville Chervil



Chervil, also known as “Leaves of Joy” or sometimes “French Parsley”, is a delicate plant with serrated, feathery fern-like leaves where the leaflets form from a loose triangle. Chervil is part of the Apiaceae family, carrots, parsley, dill, coriander and cumin.

Chervil has a mild flavor, hint of licorice or anise, a delicate cross between tarragon and parsley. Chervil is best used either in dishes with very short cook times, such as omelets, or fresh at the end of cooking, as a garnish. Chervil’s leaves can be used whole, or can be chopped or shredded – it is advised to only chop or shred immediately before use.

Chervil is one of the oldest herbs still in use today. Its essential oils have been used for centuries, and the dietary fiber from the full plant helps promote healthy digestion. Sprinkle some leaves over your green salads to add a refreshing licorice kick.
